Sometimes, space limitations or overall site design can seriously hinder or complicate matters but if you can push up a page to the 700 or 750 word level, then that would be great. As you've probably noticed, and this seems to be what you were telling me in your email, Google is a bit more critical at this, whereas Yahoo and MSN seem to index a lower word count page with less difficulty. But with all else being equal, a 600-word-plus page will definitely score you better marks with Google. It will also offer your users a lot more information too.
