It can depend on many factors, some of which the average site owner has no control over. Although Google sends out its “freshbot” crawler every few days to refresh some of your most important pages, it really spiders the whole web and completely updates its full index only at its monthly "dance". Certain search engines such as Fast-all-the-Web claim they crawl and add new sites every 7 to 21 days. As for AltaVista, and depending to whom you talk to, some might say it can take as much as 6 to 8 weeks or sometimes more to see your site added to its database, although we can personally tell you that we have had many of our clients listed in AltaVista in less than three weeks, so its really hard to say.

For the new Yahoo, I can tell you that its about every 2 or 3 days, even since Yahoo recently introduced its new Slurp spider. As for the major search directories such as DMOZ (the Open Directory Project), it can take several weeks and sometimes a few months to get added. What’s more, many of the listed categories have no editor managing that particular category. When that happens, your site inclusion request is transferred to the next available editor, if there is one. This can significantly increase the normal time it takes to get indexed in the ODP. Hope that helps.
